There's an undeniable thrill that comes with harvesting fresh vegetables from the soil. It’s the culmination of weeks of anticipation, a tangible reward for your efforts. That vibrant snap of a freshly picked green bean, the juicy burst of a ripe tomato, these are the moments that make gardening so deeply satisfying. It's about connecting with your food and appreciating nature's bounty.


The Perils of Procrastination


But what happens if you let too much time elapse before harvesting? The consequences can be significant, impacting both the quality of your produce and the overall health of your plants.

  • Diminished Flavor and Texture: Overripe vegetables often lose their peak flavor and desirable texture. Think of a zucchini that’s become watery and seedy, or beans that are tough and fibrous.

  • Reduced Future Yields: When plants are allowed to hold onto mature fruits for too long, they can signal that their growth cycle is complete. This can can slow down or even stop the production of new flowers and fruits, especially for crops like leafy greens.

  • Pest and Disease Vulnerability: Overripe or decaying produce can attract unwanted pests and become a breeding ground for diseases.


Cultivating a Harvesting Routine


Developing a good routine for tending to your plants and knowing the best harvest times is a fun and insightful journey. It’s a process of observation, learning, and sometimes, a little bit of intuition.

  • Know Your Crops: Each vegetable has its ideal harvest window. Seeking guidance from a mentor, an elder, a library or even online, will yield a wealth of information.

  • Daily Check-ins: Even a quick stroll through your garden daily can make a big difference. This allows you to spot ripening produce and address any issues.

  • The "Feel" Test: Many vegetables offer tactile clues. Tomatoes should feel firm but yield slightly to gentle pressure. Learn your veggies.


A Wonderful Surprise Harvest


We recently experienced firsthand the surprising generosity of nature. Several days of persistent rain made it challenging to visit the farm and attend to our usual responsibilities. The soil was saturated, and we knew working in it too soon could have a negative impact.

So, we patiently waited for the sun to return and dry out the soil.

When we finally made it back, we were utterly astonished by the enormous amount of growth! The plants were invigorated by the much-needed moisture and then the warmth of the sun. What might have seemed like a setback due to the rain turned into a wonderful surprise, reminding us that nature often operates on its own magnificent timeline. The subsequent harvest was incredibly abundant, filling our baskets with vibrant, healthy vegetables.

This experience underscored a valuable piece of ROOTED WISDOM: that alongside consistent harvesting, a dose of patience and trust in nature's rhythm can yield surprising abundance. The pure joy of picking fresh vegetables, combined with the continuous learning about prime growing and harvesting practices, truly makes for an exciting adventure.

Ever since April 18, 2025 members of our board, volunteers and many of our interns and junior interns have taken turns planting, watering and weeding the RWI NC1 farm. It’s been hard work maintaining the farm, but the lessons learned have been well worth it.


We are not only learning life skills and what it takes to maintain and grow our own food, but we are also learning how to collaborate and work together in multigenerational groups, which actually works out wonderfully for everyone involved. Someone’s weakness is another person’s strength and working together has made tending the farm a much easier task for everyone! Elders, veterans and people with disabilities were able to participate at the farm. Many hands makes light work, indeed! Given the chance, we’ve even been able to pick peas straight off the pod and enjoy the goodness from the ground first hand! It was a real treat that even our junior intern delighted in!


We are looking to grow our partners so we can expand our projects to assist people who are food insecure, such as children, elders, and people experiencing homelessness. We aim to jumpstart community gardening in Raleigh, Durham and Fayetteville, NC and San Antonio, TX.

Empowering Rural Entrepreneurs: Building a Stronger Future Through Support and Innovation

Rural entrepreneurs are as diverse as the communities they serve—from farmers and artists to custom shoemakers. These small businesses may be tucked away in the countryside, but their impact radiates far beyond. When we support them, we are investing in more than just a product or service; we’re investing in the growth and resilience of entire communities. Providing financial literacy, advocacy, and professional development doesn’t just help businesses thrive—it transforms entire ecosystems, creating opportunities and fueling growth for generations to come.

However, for many entrepreneurs—especially those with disabilities—overcoming barriers to business success can be especially challenging. In rural towns, access to resources that are commonly available in larger cities can be limited. This creates an uneven playing field that can stifle potential. From reliable internet and electricity to technology literacy, these are the tools that can make or break an entrepreneur’s ability to turn their dream into reality.

We believe that interventions must be solution-oriented and have a lasting impact. By providing resources and support where they’re needed most, we help create pathways for rural entrepreneurs to succeed—no matter their starting point. That’s why we are focused on empowering the youth in rural communities, helping them develop the skills and mindset needed to be the leaders of tomorrow.


Introducing the RWI Youth Summit: Fostering Innovation, Empowerment, and Opportunity

One of the ways we’re doing this is by launching the annual RWI Youth Summit, a hands-on event designed to inspire and educate high school and college students. At the summit, young people will participate in workshops, innovative think tanks, and interactive activities—all aimed at building a strength-based approach to problem-solving.

As part of our commitment to fostering leadership, the summit will also offer scholarships to students who make a significant impact in their communities. Whether through volunteer work, community organizing, or entrepreneurial efforts, we want to recognize and reward those who are already taking steps to make a difference. These scholarships will help empower students to continue their education and further their work in creating positive change.

By volunteering to support the next generation of rural leaders, we not only provide them with the tools they need but also ignite their passion to create lasting change in their communities. The RWI Youth Summit is about more than just learning—it’s about empowering the leaders of tomorrow to shape the world they want to see.

Together, we can bridge the gap between rural and urban communities, unlocking the full potential of rural entrepreneurs and the future leaders who will carry their legacy forward.
